Lunch annoys me because I am always hungry but don’t ever have anything good or easy to fix. A sandwich is never really good when you make it yourself and a salad is way too time-consuming for me. The other night I made some quick wraps for dinner and they have quickly become my new go-to lunch. Best part is, I make a whole batch at once in about 15 minutes and just keep them ready to go in the fridge.
Start with a whole wheat tortilla, I like the El Bandarito brand because they are really soft and don’t taste like cardboard. Then follow these steps add or take away whatever according to your tastes.
*Update: I shouldn’t have labeled this “guac” bc it is actually just avocado.
I smash some in a bowl and add a little salt, pepper, and lime juice.
(I just saute diced onions, deli turkey, and black beans in olive oil)
